When I learned that Cordon Bleu had weekend courses, I signed up immediately. My two good friends, Aubray and Jeanne, accompanied me to the first class. And we had to go back for more and more. The classes were taught in the Cordon Bleu classroom in Pasadena under the name Bleu Ribbon Kitchen. It was a special experience learning from Cordon Bleu instructors. We quickly bonded with our favorites and made sure we had them for different focus classes. We took classes including French Bistro, French Pastries, BBQ at home, Breakfast in Paris and Thai Street Food. Each class gave us great tips, tricks, techniques, and tons of laughter.
Cordon Bleu unfortunately chose to cease operations in the United States, so we took our last class with our favorite instructor, Chef Knight. I am grateful to have been able to participate in the superior training of the world-renowned Cordon Bleu teaching experience. I learned great techniques and expanded my culinary knowledge. The focus was more on savory cooking rather than my normal focus on baking and it served to expand my creativity, skills and thinking in the kitchen. Some of my favorite recipes can be found in my recipe section titled Bleu Ribbon.
